  • unsalted butter 1/4 cup ( 1/2 stick)
  • all-purpose flour 1/3 cup
  • whole milk 3 cups
  • super extra sharp aged cheddar cheese 4 cups
  • kosher salt 1/2 Tbsp
  • black truffles, minced 1/4 cup
  • chopped cooked bacon - (option for topping) 4 - 6 strips
  • Parmigiano-Reggiano - (option for topping) 1/4 cup
  • Panko breadcrumbs 1/4 cup
  • yellow mustard 1Tbsp
  • peas, frozen or fresh 1 cup
  • ground nutmeg 1 Tbsp
  • pasta, any short cut 1 lb.
  1. Boil pasta in salted water until al dente. Once cooked, drain and set aside.
  2. Melt the butter in a heavy-bottom saucepan over medium heat and whisk in the flour.
  3. Continue whisking and cook for 2 minutes.
  4. Slowly add the milk, whisking constantly.
  5. Cook until the sauce thickens, about 10 minutes, stirring frequently.
  6. Remove from the heat.
  7. Add the cheese, salt, mustard, truffles, peas, and nutmeg.
  8. Stir until the cheese is melted and all ingredients are incorporated.
  9. Add in cooked, drained pasta and stir until all pasta is covered with cheese sauce.
  10. Pour mixture into a buttered 9 x 13 pan.
  11. Top with Panko breadcrumbs and more cheese, then bake at 350 degrees until brown – about 30 minutes.
