  • thick cut sliced of bacon 4
  • yellow onions - about 2 extra large 6 cups
  • shallots - about 4 1 cup
  • molasses 1/4 cup
  • salt 2 TbSp
  • apple cider vinegar 1/4 cup
  • sugar 1/2 cup
  • red pepper flakes 2 TbSp
  • chilli powder 2 TbSp
  • thyme 1 TbSp

  • cook the bacon till crispy and reserve the strips and bacon fat/dripping – about 3 tbsp.

  • slice onions and shallots into thin slices.

  • in a large non-stick heavy pan, caramelize the shallots and onion with salt and bacon fat/drippings.

  • mix molasses, vinegar, Rough Rider Rye Whisky, red pepper, sugar, chili powder and thyme into a bowl.

  • stir in molasses mixture into the caramelized onion mixture.

  • chop bacon and mix into reducing onion mixture on a low heat.

  • cook until a thin marmalade.

  • stir in molasses mixture into the caramelized onion mixture.
