Roasted Purple Cauliflower

  • Cauliflower 1 large head, cut into florets
  • Garlic 3 cloves, chopped
  • Olive OIl 3 Tbsp.
  • Non-stick Cooking Spray To coat baking pan
  • Parmesan Cheese 2 Tbsp., freshly grated
  • Salt and Pepper To taste

We found purple cauliflower at the Farmer’s Market! It was so pretty we had to buy it. Then, we had to figure out what to do with this gorgeous vegetable so as to preserve it’s purple hue.

This is a simple recipe, but so delicious and the cauliflower retaines it’s pretty color.

Pre-heat oven to 450 degrees.

Spray a large baking sheet with non-stick cooking spray. On the pan, toss cauliflower, olive oil, garlic and salt and pepper. Place in the heated oven and roast for about 25-35 minutes, turning the cauliflower occasionally so it browns evenly.

Once cooked, but still slightly crunchy, remove from oven and plate. Sprinkle parmesan cheese over the top and enjoy.
