  • onion, large yellow 1/2
  • eggplant 1
  • thyme 2 tbsp
  • zucchini 1
  • tomatoes 2
  • squash 1
  • pepper, orange 1/2
  • pepper, yellow 1/2
  • pepper, red 1/2
  • EVOO 3 - 4 tbsp
  • salt to taste
  • pepper, black to taste
  • cheese, parmesan 2 cups
  • basil, chopped. 6 tbsp
  • garlic clove, minned 4cloves

A veggie side dish.

Directions

  1. Preheat oven to 400 degrees.
  2. Chop all peppers together into larger than bite size pieces and reserve.
  3. Chop thyme, parmesan cheese, basil and garlic minced. next mix with EVOO and reserve.
  4. Cut onion, eggplant, zucchini, tomatoes, and squash into ring shape.
  5. In a pie or casserole pan, lightly cover the bottom with thyme and cheese mixture.
  6. Next on top of that mixture, style and layer in onion, eggplant, zucchini, tomatoes, and squash rings.
  7. Next top the veggie layer with more of the thyme and add salt and black pepper.
  8. Bake until golden brown – about 1 1/2 hour.
