Pistachio Pound Cake

Ingredients

  • Yellow Cake Mix 1 box
  • Pistachio Instant Pudding 2 boxes
  • Club Soda 1 cup
  • Eggs 4 Large
  • Vegetable Oil 1 cup
  • Almond Extract 1 tsp.
  • Powdered Sugar For dusting

This is one of the most delicious cakes I’ve ever eaten.  I’ve been making it for years and friends and family request it often.  Ssshhh don’t tell anyone, my secret is, it’s so easy!!

Pre-heat oven to 350 degrees.

Grease and flour a bundt or tube pan.  Set aside.

In the bowl of a mixer fitted with the paddle attachment, place all ingredients.  Turn on low to incorporate mixture, then turn up speed to whip until mostly smooth (there will be a few lumps).

Pour mixture into the pan.  Please in oven and bake 50-60 minutes, or until inserted toothpick comes out clean.

Transfer to a wire rack to cool in pan for about 15 minutes.  Turn pan over onto cooling rack to completely cool.

Once completely cool, sprinkle with powdered sugar and serve.
