Orange Shallot Salad Dressing

Ingredients

  • Orange Zest 1 tsp.
  • Fresh Squeezed Orange Juice 1/4 cup (about 1 orange)
  • Salt 1/2 tsp.
  • Pepper 1/4 tsp.
  • Extra Virgin Olive Oil 2 Tbsp.
  • Apple Cider Vinegar 1 Tbsp.
  • Shallot 1 small, minced

Put all the ingredients in a glass mason jar, seal tightly and shake vigorously to combine. It’s that quick and easy!

This dressing is delicious on roasted beets with feta and toasted walnuts or a salad of spring mix lettuce with orange segments and goat cheese. This is the first of a series of homemade salad dressings I will be featuring on this site. I want to show everyone how easy and delicious homemade dressings can be.

Tip#1: I always zest any citrus before juicing, even if the recipe doesn’t call for it. I put the zest in a ziplock bag in my fridge and keep until I need it for a recipe.
Tip#2: This dressing will stay fresh in the fridge for about 5 days.
