Ingredients

  • lemons, medium-large 4 each
  • butter, unsalted 2 sticks - 16 TBSP
  • sugar 1/3 cup
  • egg yolk 8 each
  • gelatin 2-4 sheets
  • citric acid 1/3 TBSP

in a 4 quart pan, combine all in items less the gelatin and cook at a medium heat until completely combined. add in gelatin sheets, while using a immersion blender.
