- water 2 cups
- sugar 2 1/2cups
- ginger, grated, fresh 1/2 cup
- lemon (zest and juice of a med lemon) 1
- Vanilla bean 1 TBSP (1 pod)
this syrup is great with pineapple or pork.
- In a medium sized pot, mix in all ingredients
- stirring as it reduces to a simple syrup.
- the syrup is done, if you reduce have the syrup by half it’s volume and it has thickened.
- this process should only take about 1/2 – 45 minutes on a medium heat.
